This Wild Garlic Infused Butter is an incredibly flavourful butter that can be used in a variety of ways. It takes only 2 ingredients and really highlights the delicious simplicity of wild garlic.
Wild garlic is a plant that grows in the wild usually. It has a mild garlic taste and can be eaten raw. The plant grows from a bulb and produces dark green leaves and sometimes white flowers. Wild garlic typically grows in clumps in shaded areas near water like forests. It grows in abundance in Ireland between April and June. For tips on how to forage safely and mindfully, check out this Wild Garlic Foraging article I wrote for the Anglo Celt.
This Wild Garlic Infused Butter is probably the easiest recipe I have on this entire website, no exaggeration! The most complicated part is washing and chopping the wild garlic leaves. I like to very finely chop the herbs to create a beautiful speckled butter but if you would prefer to make it a smooth vibrant green instead you can puree the wild garlic in a small food processor until smooth instead.
Either way, begin by removing the stems from the leaves and wash the leaves carefully. Roll the leaves up together and finely chop using a sharp knife or food processor. Add the soft, room temperature butter to a mixing bowl. If the butter is not soft enough to mix, place into the microwave for 10 second bursts until the butter is soft enough to mix easily. Add the wild garlic and mix together well. Transfer to an airtight container.
There are a million things you could use this wild garlic butter for, just like regular butter! You could slather it all over crusty bread and eat as is or bake it in the oven for wild garlic bread, add a spoonful at the end of cooking a steak, add to fish while cooking, add to gnocchi or pasta or even baby potatoes for extra flavour. It goes so well with a variety of foods, if it goes well with garlic there’s a high chance it will go great with wild garlic.
Absolutely! Simply choose a dairy free/vegan friendly butter spread to use instead.
Yes, absolutely. You can freeze wild garlic raw or this wild garlic butter for up to 1 year. Just make sure you have used a freezer safe airtight container and have sealed it correctly.
