This Wild Garlic Infused Butter is an incredibly flavourful butter that can be used in a variety of ways. It takes only 2 ingredients and really highlights the delicious simplicity of wild garlic.

What is wild garlic?

Wild garlic is a plant that grows in the wild usually. It has a mild garlic taste and can be eaten raw. The plant grows from a bulb and produces dark green leaves and sometimes white flowers. Wild garlic typically grows in clumps in shaded areas near water like forests. It grows in abundance in Ireland between April and June. So how do I make this Wild Garlic Infused Butter from scratch?

This Wild Garlic Infused Butter is probably the easiest recipe I have on this entire website, no exaggeration! The most complicated part is washing and chopping the wild garlic leaves. I like to very finely chop the herbs to create a beautiful speckled butter but if you would prefer to make it a smooth vibrant green instead you can puree the wild garlic in a small food processor until smooth instead.

Either way, begin by removing the stems from the leaves and wash the leaves carefully. Roll the leaves up together and finely chop using a sharp knife or food processor. Add the soft, room temperature butter to a mixing bowl. If the butter is not soft enough to mix, place into the microwave for 10 second bursts until the butter is soft enough to mix easily. Add the wild garlic and mix together well. Transfer to an airtight container.

Ingredients
  

  • 250 grams salted butter soft, room temperature
  • 35 grams wild garlic leaves

Instructions
 

  • Begin by removing the stems from the wild garlic so you are left with only leaves. Wash the wild garlic carefully with cold water and firmly strain out any water.
  • Add the soft, room temperature butter into a mxing bowl. If the butter isn't soft, place it into th microwave for 10 second bursts to make it easy to mix.
  • Finely chop the wild garlic and add to the bowl.
  • Mix together until the wild garlic has been distributed evenly.
  • Transfer into an airtight container and store in the fridge for up to 2 weeks. To freeze, place into an airtight and freezer safe container for up to 1 year.
