This delicious dessert of Roasted Plums with Vanilla Ice Cream and Flaked Almonds is super simple to make and is astonishingly enjoyable to eat! Halved plums are sprinkled with brown sugar and roasted until they become almost syrupy. These are then served with some vanilla ice cream and toasted flaked almonds however they would be equally delicious served with some cream or meringues, on yoghurt or even on porridge.
As I mentioned previously, this recipe is super easy to make!
To begin, simply cut each plum in half, taking care to remove the stones from each plum. Place all halved plums into a deep baking dish, cut side up. Sprinkle the brown sugar over them and roast until soft and syrupy. Allow to cool slightly before adding to a serving bowl along with some ice cream and flaked almonds. Leftover, cooled roast plums can be stored in an airtight container in the fridge for up to 3 days.
Not at all. The skin on plums is very thin and breaks down easily while cooking. You don’t need to peel plums when using for baking, roasting, jam, crumbles etc.
Absolutely you can! Roasted plums can be frozen by placing into an airtight container or ziploc bag. Place into the freezer for up to 3 months. Allow roasted plums to come to room temperature at least before serving by defrosting at room temperature for at least 3-4 hours. Roasted plums can be reheated in the microwave or oven if you want them warm.
Absolutely! I chose brown sugar for that extra caramel flavour but white sugar will work just as well.
They can be any stage of ripeness! As long as they haven’t gone off or gone rancid by being over ripe, you can use any. If the plums are under ripe and still a little hard, they may need some extra sugar and cooking time however.
