Roasted Plums with Vanilla Ice Cream and Flaked Almonds

Equipment

  • 1 deep baking dish or tray
  • 1 Small sharp knife
  • 1 ice cream scoop optional
  • serving bowls

Ingredients
  

  • 450 grams fresh plums
  • 30 grams brown sugar
  • vanilla ice cream (1-2 scoops per person)
  • 50 grams flaked almonds

Instructions
 

  • Preheat oven to 180°c (360°f) or 170°c (340°f) if fan assisted.
  • Slice the plums in half, carefully removing the stone while doing so.
  • Place the plum halves cut side up into a deep baking dish.
  • Sprinkle the brown sugar over the plums evenly.
  • Bake for 30-35 minutes until the plums are soft and juicy.
  • Remove from the oven and allow to cool slightly.
  • Place the flaked almonds onto a flat baking tray and place into the hot oven for 5-10 minutes until they have browned slightly.
  • Take 1-2 scoops of vanilla ice cream per person and place into serving bowls. Add 2-3 plum halves and add on top, spooning over some of the syrup. Finish with a sprinkle of toasted flaked almonds and serve immediately.
  • Leftover cooled roasted plums can be stored in an airtight container in the fridge for 3 days..
