Lemon Elderflower Gin Slushie Cocktail Recipe

This Lemon Elderflower Gin Slushie Cocktail is super refreshing and perfectly in season for summer. It combines fresh and slightly sour lemon syrup with delicate, floral elderflower cordial and a touch of botanical gin. I chose a mellow, plain clear gin like this one by Dingle Gin. However, you can use whatever alcohol you prefer – or just replace with water or a non alcoholic gin to keep alcohol free!

So how do I make this Lemon Elderflower Gin Slushie Cocktail from scratch?

To make this seasonal cocktail, there are two easy steps to follow;

  • Lemon Syrup Ice Cubes
  • Elderflower Gin Slushie

Lemon Syrup Ice Cubes

To begin, add the lemon juice, sugar and water to a small saucepan. Cook on medium heat for 3-4 minutes until all the sugar has dissolved and the syrup has began to bubble. Allow to cool slightly for a few minutes. Carefully our the syrup into the ice cube trays. Gently place in the freezer on a flat surface and freeze for 2+ hours until frozen solid.

The freezing step is optional. It just helps the cocktail stay a bit more frozen a bit longer. This recipe only used 5-6 cubes for each cocktail. Leftover ice cubes can be stored in an airtight container for up to 3 months. They can be used to make more slushies or to throw into a glass of water to cool it down and flavour a little.

Elderflower Gin Slushie

To make this slushie, add all ingredients into a strong blender. Blend on low until the ice cubes start to break up. Then, you can slowly increase the strength. Continue blending for a couple minutes until a smooth, thick slush has formed.

Try to choose the smallest ice cubes you can to not damage your blender. Crushed ice would be ideal if you can get your hands on it.

Do I need fresh lemon juice for this?

You can absolutely use freshly squeezed lemon juice. Just make sure to strain out any pips first. You can also save yourself the hassle and use bottle lemon juice, like this one.

Where do I get elderflower cordial?

I chose a locally produced elderflower cordial that I picked up at a farmers market, it’s called Mary-Ellen’s Meadow and is created with foraged elderflower and is truly delightful. Richmount Cordials also produce a fantastic elderflower cordial. And if you’re in a pinch near and IKEA, they stock an elderflower cordial too. How do I make this cocktail alcohol free?

If you would prefer to turn this gorgeous cocktail into a mocktail, you absolutely can really easily!

You can substitute the gin in this recipe for water, or a non alcoholic spirit. Some amazing examples of non alcoholic gin out there right now are; Mor Zero Alcohol, Gordons 0.0% Gin, Silk Tree Alcohol Free Gin, or Ceders non Alcoholic Gin.

Equipment

  • 1 Small saucepan

  • 2-3 ice cube trays or just reuse the same one
  • 1 strong blender

Ingredients
  

Lemon Syrup Ice Cubes

  • 250 grams lemon juice
  • 200 grams water
  • 200 grams sugar

Lemon Elderflower Gin Slushie

  • Small handful ice cubes
  • 50 ml gin or your favourite spirit or non alcoholic gin
  • 30 ml elderflower syrup
  • 6 lemon syrup ice cubes

Instructions
 

Lemon Syrup Ice Cubes

  • In a small saucean, combine the lemon juce, water and sugar together.
  • Cook on a medium heat for 3-4 minutes until all the sugar has dissolved.
  • Allow to cool slightly before pouring into ice cube trays.
  • Freeze for 2 hours or until frozen solid.

Lemon Elderflower Gin Slushie Cocktail

  • In a blender, add the ice, lemon syrup ice, elderflower syrup, gin and water.
  • Blend on medium until the ice cubes begin to break down, then turn up to high until everything has blended and become thick and smooth.
  • Pour into a cocktail glass, garnish with lemon peel and fresh mint. Serve immediately.
