Bakery Style Cream Slices Recipe

These Bakery Style Cream Slices are an effortless yet delicious dessert. They are inspired by the popular cream filled slice that are served in a lot of bakeries in Ireland and the UK. Cream slices, or cream puffs as they are sometimes called, are a dessert made from puff pastry, jam and freshly whipped cream. They are usually topped simply with icing sugar. I jazzed these up a little bit and added some fresh strawberry slices, but this is totally optional!

So how do I make this Bakery Style Cream Slices from scratch?

To begin making this recipe, start off by defrosting the premade puff pastry. To do this, lay a sheet of puff pastry onto a flat, lined baking tray. Leave at room temperature for 1-2 hours until the pastry is soft. Using a sharp knife, cut the sheet vertically into to long rectangle strips. Cut each half into 4 pieces, so you have a total of 8 rectangle pieces. Spread out the cut puff pastry pieces onto flat, lined baking trays with space in between. Bake the puff pastry in a hot, preheated oven for 15-20 minutes until they have puffed up and risen and they have an even golden brown colour. Once baked, allow to cool completely before proceeding.

Once the puff pastry has cooled, add the cream and icing sugar to a medium sized mixing bowl. Whisk together using a whisk (hand or electric) until the cream has thickened and become spreadable. If you have a piping bag, you can transfer the whipped cream to it with a star nozzle.

Slice through each piece of puff pastry so you have two layer of puff pastry for each slice. Spread 1-2 tbsp of high quality strawberry jam over the bottom layer. Pipe or spread some whipped cream on top. Add a few slices of fresh sliced strawberries. Top with the top layer of puff pastry and dust lightly with icing sugar.

Serve immediately or store leftovers in an airtight container for 2-3 days.

Equipment

  • 1 flat, lined baking tray
  • 1 Sharp Knife
  • 1 Medium sized mixing bowl
  • 1 Whisk
  • 1 Piping bag optional

Ingredients
  

  • 1 sheet puff pastry defrosted
  • 200 grams strawberry jam
  • 250 grams cream
  • 25 grams icing sugar
  • 100 grams sliced fresh strawberries optional

Instructions
 

  • Preheat oven to 200°c (400°f) or 190°c (380°f) if fan assisted.
  • Defrost 1 sheet of puff pastry for 1-2 hours at room temperature on a flat lined baking tray. Using a sharp knife, slice the sheet in half vertically, so you have 2 long rectangular strips. Cut each piece into 5 rectangles, so you have 10 small rectangles.
  • Place into the oven and bake for 15-20 minutes until puffed, risen and an even golden brown colour. Remove from the oven and allow to cool fully.
  • In a mixing bowl, add the cream and icing sugar. Whisk together to soft peaks, until firm enough to pipe or spread.
  • Take each piece of cooled puff pastry and slice each piece in half, horizontally, so you have two layers of puff pastry.
  • Open the layers, placing the cut side up and spread 1 tablespoon on bottom layer, cut side up.
  • Place the whipped cream into a piping bag and pipe two lines of cream onto the jam. Alternatively, use a spoon and spread.
  • Thinly slice the strawberries and place on top of the cream. (This is optional)
  • Place the top layer on top of the strawberries, cut side down.
  • Sieve some icing sugar over the tops for decoration. (Optional)
  • Serve immediately. Store any leftovers in the fridge for 2-3 days.
