Watermelon Gin Granita

- 600 grams watermelon (about half a medium sized watermelon)
- 150 grams maple syrup
- 30 grams lime juice
- 30 grams gin
Begin by removing the skin from the watermelong and cutting into small chunks.
If using a juicer, add all the watermelon to the juicer a few cubes at a time and juice into a jug/mixing bowl.
If using a food processor, add the watermelon to the processor and blend until smooth. Strain through a sieve and discard any solids left in the sieve.
Add the maple syrup, lime juice and gin to the watermelon juice and whisk together.
Pour into freezer proof dish and freeze for at least 4 hours.
Every hour, remove the granita from the freezer and using a whisk, break up the larger chunks of ice into smaller ice crystals.
Alternatively, allow the granita to freeze into a block and when fully frozen, scrape off servings with a spoon or fork.
