Equipment

  • 1 Large mixing bowl
  • 1 Electric whisk or stand mixer with whisk attachment
  • 1 Rubber spatula
  • 1 Sieve
  • 8 Small Bowls
  • 8 spoons
  • 8 Piping bags optional
  • 1 swiss roll tray thin, rectangular tin

Ingredients
  

Sponge

  • 3 whole eggs
  • 90 grams caster sugar
  • 120 grams plain flour
  • Food colouring - red, yellow, blue, green

Filling

  • 150 grams lightly whipped cream
  • 3-4 generous tablespoons jam or curd

Instructions
 

  • Preheat oven to 190°c (380°f) or 180°c (360°f) if fan assisted.
  • Add the eggs and sugar to a large mixing bowl or stand mixer bowl. Whisk for 6-7 minutes on high speed until the eggs have doubled in volume and become pale and fluffy.
  • Sieve the flour into the eggs and gently fold in using a rubber spatula, being careful not to knock out too much air.
  • Divide the batter equally into 8 different bowls. colour each of them adifferent colour from the pride flag using the food colouring or combinationsof colours; purple, blue, aqua, green, yellow, orange, red and pink.
  • Pour or pipe lines of eachcolour diagonally, starting at the corner in the colour order of the flag;purple, blue, aqua, green, yellow, orange, red and pink.,
  • Bake for 7-8 minutes, turning halfway between baking until dryto the touch and slightly risen.
  • When baked and still warm, place a sheet of baking paper down ona flat surface. Lightly sieve over some icing sugar. Place the warm cookedsponge face down directly onto the icing sugar. Gently peel off the bakingpaper on the cooked sponge.
  • Using the icing sugar covered baking paper, carefully roll upthe sponge, starting at the shortest end. Twist together the ends of the bakingpaper and leave to cool.
  • Once fully cooled, gently unroll the sponge. Spread the jam orcurd evenly over the sponge and top with the whipped cream.
  •  Carefully roll back up and place in the fridge for at least 20minutes before serving for easy cutting.
