Equipment

  • 1 Large mixing bowl
  • 1 Rolling Pin
  • 1 scone cutter
  • 1-2 Flat baking trays
  • 1 Pastry brush
  • 1 Small Bowl

Ingredients
  

  • 200 grams cooking apples peeled and chopped
  • 20 grams brown sugar
  • 1 tbsp cinnamon
  • 450 grams self raising or plain flour
  • 120 grams caster sugar
  • 10 grams baking powder
  • 120 grams soft butter
  • 2 whole eggs
  • 170 grams buttermilk
  • egg wash 1 egg and 2 tbsp milk

Instructions
 

  • Preheat oven to 210°c (420°f) or 200°c (400°c) if fan assisted.
  • Place the peeled and chopped apple onto a baking tray and bake for 10 minutes until soft when pierced with a knife.
  • Once baked, leave to one side to cool slightly.
  • In a large mixing bowl, add the flour, sugar and baking powder. Whisk together briefly.
  • Add the soft butter and using your hands, rub together the butter and dry ingredients until it resembles breadcrumbs.
  • Add the eggs and buttermilk to the bowl and mix everything together with your hands or wooden spoon or strong rubber spatula until mostly combined. A little flour left at the bottom of the bowl is fine.
  • Lightly flour a clean, even work surface and transfer the dough to the floured surface.
  • Lightly flour the top of the dough and roll out.
  • In a bowl, combine the apple, brown sugar and cinnamon.
  • Place half of the apples over the top of the dough spaced out evenly.
  • Fold up the dough over itself. Lightly flour the top and roll out again.
  • Place over the rest of the apple on the dough and fold up again.
  • Roll out lightly to the height of your scone cutter.
  • Cut out the scones using your cutter and place on lined flat baking trays with lots of space in between. You will get 6-7 scones out of this.
  • Lightly knead together the scraps and cut out the remaining dough.
  • Lightly brush the tops of the scones with egg wash and place into the hot oven immediately.
  • Bake for 25-30 minutes until evenly golden brown on top and risen, making sure to turn the tray halfway through cooking.
