  • 1 1/4 cup measure

Ingredients
  

  • 2 ripe bananas
  • 2 whole eggs
  • 1 tsp vanilla extract
  • 150 grams plain flour
  • 2 tsp baking powder
  • 50 grams milk
  • fresh strawberries to garnish
  • golden syrup/honey/maple syrup to garnish

Instructions
 

  • Begin by adding 2 bananas to a mixing bowl. Mash bananas well with a fork.
  • Add in the eggs and vanilla and whisk together well.
  • Add in the flour and baking powder and whisk until just combined.
  • Add in the milk and whisk until fully combined. Be careful not to over mix, a few small lumps are fine.
  • Heat the frying pan on a medium heat.
  • Once hot, pour 1/4 cup of batter at a time onto the pan.
  • Cook for 2-3 minutes until the top of the pancakes starts to bubble and look dry.
  • Flip the pancake over and continue to cook for 1-2 minutes until cooked.
  • Place onto a plate and leave in the oven on the lowest temperature to keep warm while you continue with the rest of the batter.
  • Serve with fresh strawberries and golden syrup/honey/maple syrup
