Ingredients
  

  • 100 grams cream
  • 50 grams white chocolate
  • 50 grams thick caramel
  • 30 grams honey
  • 150 grams cream

Instructions
 

  • In a small saucepan, add the first cream, white chocolate, caramel and honey.
  • Heat on low heat,whisking often until the chocolate has fully melted.
  • Remove from the heat and add in the second cream. Whisk briskly.
  • Blend together using a hand blender until everything is smooth.
  • Pour into an airtight container and place into the fridge and chill for at least 2 hours.
  • Once fully chilled, pour into a large mixing bowl and whisk for 2-3 minutes until thick and pipeable.
  • Place into a piping bag and chill for another 10-15 minutes until firm.
