Watermelon Gin Granita

Equipment

  • Large mixing bowl or jug
  • Juicer or food processor and sieve
  • Whisk
  • Freezer proof container
  • Fork

Ingredients
  

  • 600 grams watermelon (about half a medium sized watermelon)
  • 150 grams maple syrup
  • 30 grams lime juice
  • 30 grams gin

Instructions
 

  • Begin by removing the skin from the watermelong and cutting into small chunks.
  • If using a juicer, add all the watermelon to the juicer a few cubes at a time and juice into a jug/mixing bowl.
  • If using a food processor, add the watermelon to the processor and blend until smooth. Strain through a sieve and discard any solids left in the sieve.
  • Add the maple syrup, lime juice and gin to the watermelon juice and whisk together.
  • Pour into freezer proof dish and freeze for at least 4 hours.
  • Every hour, remove the granita from the freezer and using a whisk, break up the larger chunks of ice into smaller ice crystals.
  • Alternatively, allow the granita to freeze into a block and when fully frozen, scrape off servings with a spoon or fork.
