Small Batch Apple Backed Oats

Equipment

  • 1 small blender or hand blender and bowl
  • 1 Small mixing bowl
  • 1-2 small individual baking dishes

Ingredients
  

  • 80 grams oats
  • 150 grams milk
  • 1 whole egg
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla essence
  • 1 large apple, peeled, cored and chopped into chunks
  • 1/4 tsp cinnamon
  • 30 grams brown sugar
  • greek yoghurt to serve -optional

Instructions
 

  • Preheat oven to 170°c (340°f) or 160°c (320°f) if fan assisted.
  • In a small blender or bowl, add the oats, milk, baking powder, egg and vanilla. Blend together until smooth.
  • In the small mixing bowl, add the apples, cinnamon and brown sugar. Mix together until coated. Pour the oats mix over the apples and mix everything together.
  • Pour into the baking dishes about 3/4 full, leaving space for it to rise.
  • Bake for 20-30 minutes, checking to see if they are cooked after 20 minutes. They are done when they are dry to the touch and a toothpick inserted into the middle comes out clean.
  • The baked oats can be served warm or cold, with a dollop of greek yoghurt.
  • Leftovers can be wrapped tightly and kept at room temeprature for up to 2 days.
