Cranberry Simple Syrup for Drinks

Equipment

  • 1 Saucepan
  • 1 wooden spoon or potato masher
  • 1 Small sieve
  • 1 Bowl

Ingredients
  

  • 150 grams cranberries fresh or frozen
  • 200 grams caster sugar
  • 350 grams water
  • 1 sprig rosemary OPTIONAL

Instructions
 

  • In a saucepan, add all the ingredients.
  • Bring to a boil on a high heat and turn down to a medium heat to simmer for 10-15 minutes until the cranberries start to soften and burst.
  • Take the syrup off the heat and using a wooden spoon or potato masher, smush the cranberries so they release a lot of their juices.
  • Carefully pour the syrup through a sieve into a bowl. Using a spoon or rubber spatula, press the cranberries into the sieve to remove as much as the juice as possible while leaving the skins in the sieve.
  • Allow to cool fully before transferring to a bottle or jar.
  • Store in the fridge for up to 1 week.
