Equipment

  • Large mixing bowl
  • Whisk (electric or hand)
  • Rubber spatula
  • 2lb loaf tin

Ingredients
  

  • 3 whole bananas ripe
  • 50 grams caster sugar
  • 50 grams soft dark brown sugar
  • 2 whole eggs
  • 100 grams vegetable oil
  • 1 tsp vanilla extract
  • 180 grams plain flour
  • 50 grams cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 170°c (340°f), 160°c (320°f) if fan assisted.
  • In the large mixing bowl, add the ripe bananas and mash with the whisk until you get a puree.
  • Add the sugar, oil, eggs and vanilla and whisk until combined. It will look a little frothy.
  • Sieve in the cocoa powder, flour, baking soda and salt.
  • With a rubber spatula, fold in the dry ingredients till a smooth batter forms and there is no more lumps.
  • Pour into the greased and lined loaf tin.
  • Bake for 45-50 minutes or until a skewer inserted into the middle comes out clean.
