Mojito Granita
Refreshing easy light summer dessert with the flavours of a mojito.

Ingredients

fresh mint
750
ml
water
190
grams
sugar
250
ml
lime juice
50
ml
alcohol (rum, vodka and gin work excellent here, in this recipe I've used coconut rum)
Instructions
Soak the mint in the water and leave in the fridge overnight or for at least an hour.
Mix together with the sugar and lime juice in a saucepan and bring to a boil. Take off the heat and strain through a fine sieve.
Whisk in the alcohol if using.
Allow to cool fully, transfer into freezable container and freeze for at least 4 hours.
Agitate the granita with a fork rigorously and break into small ice crystals before serving,
