Mojito Granita

Refreshing easy light summer dessert with the flavours of a mojito.

Equipment

  • Freezer

Ingredients
  

  • 1 bunch fresh mint
  • 750 ml water
  • 190 grams sugar
  • 250 ml lime juice
  • 50 ml alcohol (rum, vodka and gin work excellent here, in this recipe I've used coconut rum)

Instructions
 

  • Soak the mint in the water and leave in the fridge overnight or for at least an hour.
  • Mix together with the sugar and lime juice in a saucepan and bring to a boil. Take off the heat and strain through a fine sieve.
  • Whisk in the alcohol if using.
  • Allow to cool fully, transfer into freezable container and freeze for at least 4 hours.
  • Agitate the granita with a fork rigorously and break into small ice crystals before serving,
