Large mixing bowl
Whisk (electric or hand)
Rubber spatula
2lb loaf tin
- 3 whole bananas ripe
- 50 grams caster sugar
- 50 grams soft dark brown sugar
- 2 whole eggs
- 100 grams vegetable oil
- 1 tsp vanilla extract
- 180 grams plain flour
- 50 grams cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Preheat oven to 170°c (340°f), 160°c (320°f) if fan assisted.
In the large mixing bowl, add the ripe bananas and mash with the whisk until you get a puree.
Add the sugar, oil, eggs and vanilla and whisk until combined. It will look a little frothy.
Sieve in the cocoa powder, flour, baking soda and salt.
With a rubber spatula, fold in the dry ingredients till a smooth batter forms and there is no more lumps.
Pour into the greased and lined loaf tin.
Bake for 45-50 minutes or until a skewer inserted into the middle comes out clean.
