Whiskey Baked Apricots with Vanilla Recipe

It’s apricot season! And what better way to celebrate than with these incredibly easy Whiskey Baked Apricots with Vanilla Recipe. This recipe is also gluten free, vegan and egg free! This is the perfect way to enjoy fresh Apricots, even if they aren’t fully ripe yet. Use them to top ice cream, cheesecakes, slices of cake or even yoghurt with a drizzle of the boozy cooking syrup for a decadent yet simple dessert or brunch!

Okay so how do I make these Whiskey Baked Apricots with Vanilla Recipe from scratch?

Honestly, when I say this recipe is easy and simple, I really mean it!

Begin by selecting apricots that are just about ripe but are still firm to the touch. If you use fully ripe ones it will still be delicious but they will likely go mushy and more like a compote. Which, again, is very tasty but they won’t hold their shape as well.

Once you have selected your apricots, cut them in half down the middle. Remove the stones and stems and place cut side face up into a deep baking dish or tray.

Sprinkle over the brown sugar, followed by the vanilla and Whiskey. Cover the whole baking dish or tray in tin foil and seal carefully.

Place into the oven and bake for 15-20 minutes until the apricots are cooked. You can check this by poking them with a small sharp knife, if they are soft, they are cooked. Remove from the oven and remove the tin foil. Serve warm over ice cream or yoghurt and drizzle some of the roasting syrup over.

How long will these Whiskey Baked Apricots with Vanilla last for?

Once cooled, you can place the baked apricots along with the syrup into an airtight container. Keep in the fridge for up to 3 days.

What kind of Whiskey should I use for this recipe?

When choosing a Whiskey for this recipe, use the best quality Whiskey you can get your hands on! It’s a really simple recipe so the whiskey really stands out. Make sure to choose a high quality Whiskey or your favourite spirit!

Some of my favourite Whiskeys to use for this are; Jameson, Bushmills, Dingle Single Malt, Teeling Small Batch. (Please note that these are all Irish Whiskeys, sold in Ireland. You may have access to different Whiskeys depending on where you live)

Bourbon also works incredibly well with these recipe. Some of my favourite Bourbons for this are; Jim Beam Double Oak, Wild Turkey, Buffalo Trace .

Equipment

  • Small oven proof baking dish
  • Tin Foil
  • Small Knife

Ingredients

  • 300 grams fresh apricots
  • 75 grams brown sugar
  • 1 tbsp vanilla extract
  • 20 ml Whiskey or Bourbon

Instructions

  • Preheat the oven to 180°c (360°f) or 170°c (340°f).
  • Using a small knife, cut the fresh apricots in half and remove the stone from each one.
  • Place into an oven proof baking dish.
  • Sprinkle over the brown sugar and drizzle over the vanilla extract and Whiskey.
  • Cover the top of baking dish fully in tin foil and seal the edges.
  • Place into the oven and bake for 20 minutes until the apricots are soft when poked with a small knife but still hold their shape.
  • Serve warm over ice cream drizzled with the baking juices.
