I am a huge fan of granitas, especially during the summer and especially if there’s alcohol involved! This delightfully boozy frozen Watermelon Gin Granita Recipe (which is vegan and gluten free!) really hits the spot and can be thrown together effortlessly with no hugely fancy equipment needed. If you have a juicer/food processor and a freezer, you can make this frozen cocktail! Because who wants to have to choose between a cocktail and dessert when you can have both in one?!
I really wasn’t exaggerating when I said this recipe is effortless. In just a few simple steps you can make this incredibly tasty boozy, fruity granita that is almost like a frozen cocktail!
Start off by removing the skin from your fresh watermelon and cutting it into rough chunks. Next, throw this into your juicer or food processor. If using a juicer, simply juice into a jug/mixing bowl. If using a food processor, blend until smooth and then pour through a sieve to remove any lumps or seeds left. Next, add in the maple syrup, lime juice and gin. Whisk everything together and pour into a freezer safe container.
Place this in your freezer for at least 4 hours. Every hour, remove from the freezer and break up the larger ice chunks with a strong whisk. Alternatively, allow it to freeze into a solid block, like I have below and scrape off small ice crystals with a fork or spoon.
This Watermelon Gin Granita can be kept for up to 3 months in the freezer.
Use a high quality gin when making this granita. My favourite go to currently is Mo Chara Pink Grapefruit Gin sold at Aldi but you can use your favourite. You can also subsitute the gin for any other clear spirit. Rum, vodka or tequila would work amazingly here too.
Try to choose a sturdy freezable container to freeze the granita in. You will scrap around the granita a lot and you want to choose a container that you won’t destroy with the scratching.
If you really want to make this quick granita even faster, buy already made watermelon juice! If it’s a sweetened juice, simply omit the maple syrup.
The easiest way to make this granita is to break up the ice crystals every hour as directed above. However, if you don’t have the time, or completely forgot about it like I did, don’t fret! You can scrap it once it’s fully frozen, it just takes a little more work and time to do so.
