This Rhubarb Gin Cosmo Cocktail is a gin based spin on the classic Cosmopolitan Cocktail, using leftover rhubarb stewing liquid that gives this drink a beautiful soft, blush pink and rhubarb gin. This double dose of rhubarb gives it an extra punchy flavour and is sure to set your taste buds alight.

A classic cosmopolitan cocktail consists of Citron Vodka, Cointreau, lime juice and cranberry juice, shaken over ice and served in a martini glass.
This cocktail is super easy to make. Simply add some ice to a cocktails shaker and pour over the rhubarb gin, Cointreau, lime juice and rhubarb stewing liquid. Shake for 20-30 seconds and strain into a cocktail glass. Serve with a lime of rhubarb garnish. If you don’t have a cocktail shaker, you can add all ingredients into a small jug or glass and stir together. Leave the drink for 1-2 minutes to let the ice chill the drink. Strain into your cocktail glass of choice ad serve immediately.
No problem! You can buy rhubarb syrup to use in this cocktail instead, like this Rhubarb Syrup from Ikea, or this Rhubarb Syrup by Irish based brand Wild About . Use half a shot of the syrup (about 25 ml) and top with cranberry juice.
