This Pineapple Pornstar Martini is a delicious twist to the lavish classic Pornstar Martini, which usually consists of vanilla and passionfruit flavours and typically served with a small shot of prosecco or sparkling sweet wine. My twist is made using a homemade pineapple and vanilla syrup with caramel notes and a delicious pineapple gin by a local, Irish gin company, Mo Chara which is now sold in Aldi. The cocktail is sweet, fruity and slightly fizzy due to the prosecco.
Despite the name, the ingredients don’t represent a martini at all. “As for the first part, it’s said by some that its creator, bartender Douglas Ankrah, thought it was what a porn star would order; other stories hold that he was inspired by the smell of a stripper’s perfume.” (Liqour.com) Typically, a normal pornstar martini consists of vanilla vodka, passionfruit liqueur, simple or vanilla syrup, lime juice and passionfruit juice and served with a small shot of prosecco or sparkling wine on the side. The sparkling wine can be added to the drink or downed as a shot after the drink as a palate cleanser.
In my version, I have replaced the alcohol with pineapple gin, used a vanilla pineapple syrup and pineapple juice and served with a small shot of prosecco.
This syrup is a great way to use any leftover pineapple peels. They contain lots of flavour still and can be used to make this fragrant syrup.
Begin by adding half of the sugar to the saucepan. Heat on medium, swirling the pan often until the sugar caramelises. Add in the rest of the sugar and swirl to incorporate. Allow to melt until a light amber caramel forms. You can skip the previous step by using dark brown sugar instead if you prefer. Next, add the water The sugar will splutter and the sugar will start to harden. This is normal. Allow to syrup to boil for another 2-3 minutes until the sugar has dissolved. Add in the vanilla and pineapple peel and allow to cook for a further 5-10 minutes on a high heat until the peel has started to soften. Pour into a jar through a small sieve, pressing the pineapple down well to get any juice from it. Discard the leftover pineapple peel and leave the syrup to cool.
This cocktail is super easy to throw together once you have the syrup. Begin by adding some ice to your serving glasses to chill them. Add some ice to a cocktail shaker or just and add all the ingredients except for the prosecco/sparkling wine. Shake or stir for 20-30 seconds until mixed fully. Remove the ice from the glasses and strain the cocktail into each glass evenly. Leave a little room for the prosecco/sparkling wine. Serve the prosecco/sparkling wine in small shot glasses to be added to the drink or taken as a shot after, whatever the drinker prefers.
I used MoChara Pineapple Gin, but there are a number of other alcohols that would work for this too;
