Kataifi pastry is a popular addition to a lot of viral Dubai chocolate recipes. When cooked correctly, the pastry stays incredibly crispy and crunchy for days even when combined with pistachio cream. This leads a lot of people to question how to cook kataifi pastry for Dubai chocolate recipes.
To begin, remove the pastry from the freezer. Using a sharp knife, cut the frozen pastry into small strips, separating the strands as much as you can. I found it easier to cut into the pastry while it was still frozen. When it starts to defrost it becomes more difficult. Heat the pan on a medium-low heat and add the butter. Once the butter has melted and the pan has warmed, add the kataifi pastry. Cook on a medium-low heat for 15-20 minutes stirring often until the pastry has all turned a dark golden brown. Remove from the heat and leave to one side to cool.

Cooked kataifi pastry can stay crunchy for up to 1 week if not combined with anything and stored correctly. Once it has been mixed with pistachio cream it still keeps for 1 week. If combined with something juicy or full of liquid like strawberries, it tends to soften after 1 day.
Yes, any fat that you could use to toast or fry something can be used. Butter tastes better but you can also use dairy free spreads or oils.
