This Cranberry Simple Syrup is a deliciously festive syrup that can be used in a wide variety of drinks, cocktails, mocktails and even desserts! It is made simply with just cranberries, water and sugar and is packed full of flavour. This cranberry syrup has a delicate sweet and sour balance that is the perfect addition to drinks during the holidays. Fr an extra pop of flavour you can also add a sprig of rosemary or a cinnamon stick while cooking.
To begin, add all the ingredients to a saucepan. Bring to a boil on a high heat and turn down to a medium heat to simmer for 10-15 minutes until the cranberries start to soften and burst. Take the syrup off the heat and using a wooden spoon or potato masher, smush the cranberries so they release a lot of their juices. Carefully pour the syrup through a sieve into a bowl. Using a spoon or rubber spatula, press the cranberries into the sieve to remove as much as the juice as possible while leaving the skins in the sieve. Allow to cool fully before transferring to a bottle or jar.
Store in the fridge for up to 1 week.
Choose either fresh or frozen cranberries for this recipe. They will give lots of juice and flavour to the syrup. I would not recommend using dried cranberries for this syrup.
You can have it simply with soda water or lemonade for a quick but refreshing drink. You can also add the syrup to a variety of drinks including Moscow Mules, Old Fashioneds,Gin Fizzes, Lemon Drop Martini, or any cocktail or mocktail that has a sweet and sour flavour balance.
