Chocolate Peanut Butter Stuffed Dates Recipe

These Chocolate Peanut Butter Stuffed Dates are the ultimate treat to snack on. They are sweet, salty, crunchy, smooth and beyond easy to make lots of. I have seen them described as little snickers type bites – and I’d agree! They are gluten free and can be made vegan by using dairy free chocolate. You can make a bunch of these and store in an airtight container in the fridge for at least a week. They probably last more than a week in the fridge but I honestly haven’t been able to test this as they haven’t managed to last longer in my house!

So how do I make these Chocolate Peanut Butter Stuffed Dates from scratch?

This recipe is super simple to make. Start off by stuffing about teaspoon of peanut butter into your dates. Then sprinkle on a few roasted unsalted peanuts. Melt the chocolate in the microwave until fully melted and smooth. Using a spoon, drizzle the chocolate over the dates and top with a sprinkle of flaky sea salt. Leave for 20-30 minutes at room temperature or in the fridge until set.

What type of dates should I use for this recipe?

The best kind of dates for this recipe is soft, squishy and sweet dates. Look for whole dates that haven’t been completely dried. I used Supervalu Dates but you can also use medjool dates too. You want a soft texture with sweet flesh to compliment the peanut butter and salt.

What kind of peanut butter should I use for these Chocolate Peanut Butter Stuffed Dates?

I chose to use Supervalu smooth peanut butter, just out of convenience. It also has a high peanut content with minimal additives. Another great option is Totally Nutz, a natural peanut butter created in Galway, Ireland. For a little something different, check out Nutshed, an Irish company that produces delicious nut butters such as cinnamon and raisin. Harry’s Nut Butter is another incredible Irish nut butter brand to keep an eye out for! I personally opted for smooth peanut butter along with a couple roasted peanuts for crunch but you could choose chunky and skip the extra step!

Equipment

  • 1 small microwave safe bowl
  • 1 lined flat tray

Ingredients

  • 200 grams dates
  • 150 grams peanut butter
  • 50 grams roasted unsalted peanuts
  • 40 grams milk chocolate
  • Sea salt to finish

Instructions

  • Begin by opening the dates. This can be done with a sharp knife, cut into one side to create a pocket. Take care not to cut the whole way through. If your dates come already cut, gently open them and place on the lined, flat baking tray.
  • Take about a teasepoon of peanut butter and fill each date.
  • Sprinkle some peanuts on top.
  • Using a microwave safe bowl, melt the milk chocolate in the microwave. Start with 45 seconds, then take out and stir and return to the microwave for 10 second bursts until fully melted.
  • Using a spoon, generously drizzle the milk chocolate over the dates.
  • Sprinkle a little sea salt on each date.
  • Leave to set for 20-30 minutes until the chocolate has hardened.
  • Store any leftovers in an airtight container in the fridge for up to 1 week.
