This Chocolate Orange Mayo Upside Down Cake is incredibly rich, moist and fragrant and was inspired by a very unusual product. I entered a competition in December 2021 ran by Heinz Ireland and Terry’s Chocolate Orange. As one of the lucky winners, I received a limited edition jar of Terry’s Chocolate Orange Mayo. I wondered what the heck I was going to do with this. When I tried it by itself as a tester, I quickly decided it would be better in a cake. The flavour of chocolate orange was delicious so I thought I would continue to play around with these flavours to make a chocolate orange cake with the mayo. If you didn’t manage to get your hands on this limited edition Heinz Terry’s Chocolate Orange Mayo, you can substitute normal mayo, extra cocoa powder and extra orange zest.
Heinz Terry’s Chocolate Orange Mayo is a limited edition Mayo that Heinz and Terry’s Chocolate Orange collaborated on for Christmas 2021. The only way you could get your hands on a jar was through entering a Instagram competition. To enter, you simply had to tag someone you thought would find it interesting. It was advertised as being able to try it before Christmas. My winning jar didn’t arrive until halfway through January though so I wasn’t able to create a Christmas recipe for this unfortunately.

As described above, it’s a smooth,very thick mayo flavoured with the unmistakable chocolate and orange flavour of Terry’s Chocolate Orange. It’s sweet yet creamy and tangy. I think if you really like mayo, you may very well like this. I tried a little straight from the jar and spread onto toast and I can honestly say that personally, I didn’t like it. I’m usually a huge fan of salty and sweet combinations. But for me, this was just too far to have as is. I did however believe i would be amazing in a cake recipe. Chocolate Mayo Cake is definitely a thing and so this Chocolate Orange Mayo Upside Down Cake was born.
This cake really is super simple to throw together. The Mayo contains eggs and fat which simplifies this moist chocolate orange cake even further.
Begin by slicing one orange and laying down flat into a greased and lined 8 inch round cake tin. Next, place the chocolate orange mayo and milk into a small bowl. Whisk together well until smooth and no lumps remain. In a large mixing bowl, add all the dry ingredients along with the orange zest. Add the liquid to the dry ingredients and whisk well to combine. Be careful not to over mix, a few small lumps left is fine. Pour the cake batter over the slices oranges in your cake tin and smooth over evenly. Place into a preheated oven and bake for 30-40 minutes until a skewer inserted into the middle comes out clean.
Allow to cool before turning out onto a serving plate. Remove the baking paper and place sliced oranges on top as decoration.
