So I know everyone went banana bread crazy at the start of this pandemic and baked off multiple loaves while feeding their sourdough starter. I killed my sourdough starter quite quickly but I believe a baby starter I made for my sister still survives today.. I hope? Anyways, I totally missed the banana bread trend but had many ripe bananas staring me in the face this week. I originally had resigned to just making a banana bread and just not posting about it. (Queue food bloggers gasping in horror) However, I stumbled across this amazing looking recipe on Pintrest. I excitedly jumped down the rabbit hole and before I knew it, I was starting to make this beautifully moist chocolate banana bread recipe, that can be found here, on DelightfulEMade.
Is banana bread actually a bread? Or a cake? I feel like it can be argued both ways. It has a cake like texture and does not contain any yeast. However, Irish soda bread recipes do not contain yeast either and also rely on baking soda for the rise so either side can be considered, really. Whatever you want to categorise it as, this chocolate banana bread recipe is so satisfying. It’s super moist from the banana yet rich and decadent from the chocolate.
This Chocolate Banana Bread Recipe can be made in just a few simple steps. First, mash up your banana until mostly smooth. Add in your sugars, eggs, oil and vanilla and whisk together until it starts to bubble slightly. Next, you’re going to sieve in all the dry ingredients and with a rubber spatula, fold in until smooth. Pour into a greased lined 2lb loaf tin, and bake! I topped mine with some sliced bananas. The original recipe I got this from added dark chocolate chips which would be an amazing addition, I just didn’t happen to have any on hand.
