Banoffee Ice Cream Sundae Recipe

This Banoffee Ice Cream Sundae is a delightfully easy and quick way to enjoy all the banoffee flavours without the trouble of making a whole pie. It’s an individual serving and takes only a couple minutes to throw together. Perfect for when you have a sweet tooth craving but don’t want a whole pie!

So how do I make this Banoffee Ice Cream Sundae from scratch?

To make this ice cream sundae, we will need a few different ingredients;

  • Salted Caramel Ice Cream
  • Whipped Cream
  • Caramel Sauce
  • Fresh Banana
  • Crushed Biscuits

Salted Caramel Ice Cream

For the salted caramel ice cream, you can make your own if you wish. You can take a peek at my recipe for a No Churn Salted Dulce De Leche Ice Cream if you wish. You can buy this, of course, if you don’t have the inclination to make your own. Some delicious examples of this could be;

Whipped Cream

To make the whipped cream, simply add the cream and icing sugar into a mixing bowl. Whisk, using a hand whisk or electric whisk, until the cream is thick and hold it’s shape. You can skip this step by buying already whipped cream either in a tub or in a squirty bottle.

Caramel Sauce

Another item that you can make yourself, or buy in! To make your own, check out my caramel sauce recipe under my Salted Caramel Pecan Cheesecake Recipe. For recommendations on what caramel sauce to buy, check out the following options;

Fresh Banana

This is a little self explanatory, just fresh banana sliced up. I prefer to choose a banana that is just about ripe so the texture is still a little firm and not mushy. However, if you prefer very ripe bananas that are a little softer, go on ahead. This banoffee ice cream sundae can be made with your spin on it!

Crushed Biscuits

When it comes to a traditional banoffee, the typical biscuit choice is McVities Digestives. If you prefer a sweeter crumb, you could choose McVities Rich Tea Biscuits. Ultimately, you can choose whatever your favourite biscuit it, or whatever you have in the kitchen! To crush the biscuits, add them to a food processor and pulse until you create crumbs. Alternatively, if you don’t have a food processor or don’t want to have to wash it, you can place your biscuits into a ziploc bag and bash it with a rolling pin until you get crumbs.

If you would like to prepare this dessert in advance, you could add all the ingredients, minus the whipped cream and fresh banana into freezer safe containers. Place in the freezer until you are ready to serve. Add the whipped cream and sliced bananas right before serving.

Equipment

  • 1 Mixing bowl
  • 1 Whisk
  • 1 ice cream bowl
  • 1 rolling pin or food processor

Ingredients

  • 50 grams cream
  • 5 grams icing sugar
  • 20 grams digestives or bicuits
  • 2 tbsp caramel sauce or dulce de leche
  • 2 scoops salted caramel ice cream
  • 1/2 banana

Instructions

  • In a mixing bowl, add the cream and icing sugar. Whisk until you reach soft-hard peaks. This means the cream will hold it's shape when mixed.
  • Blitz the bicuits in a food processor until they resemble breadcrumbs or place into a ziploc bag and smash with a rolling pin unti crushed.
  • Take 1-2 scoops of caramel ice cream and place into an ice cream bowl. Add the whipped cream and drizzle over the caramel sauce.
  • Slice the banana and add on top as well as the crushed biscuits.
  • Serve immediately.
