These Small Batch Apple Baked Oats are a delicious and nutritious breakfast option. This viral recipe is sometimes referred to as a blended porridge cake as it contains all the ingredients you would use to make porridge or overnight oats (plus an egg and baking powder to make it fluffy). This recipe makes just 3 servings but you can multiply the recipe to make more portions and freeze for convenience.

So how do I make this Apple Baked Oats from scratch?

To begin, add the oats, milk, baking powder, egg and vanilla to a mixing bowl or to the bowl of a small food processor. Blend everything together until smooth. In a separate bowl, add the chopped apples, brown sugar and cinnamon. Mix together until the apples are coated. Taste the apples to check for sweetness, add a little more if the apples are still sour. Stir half of the apples into the baked oats batter. Pour the batter into small or individual baking dishes until about 3/4 full. Sprinkle the remaining apples over the batter. Bake for 20-30 minutes, checking after 20 minutes, until risen and golden brown around the edges.

Serve warm with a dollop of greek yoghurt. Baked oats are best eaten on the day of baking but leftovers can be kept for 2 days. To serve, warm in the microwave or oven.

Any kind of apple can be used for this recipe. My favourite types of apple to use for this is Bramley apples (also called cooking apples) or red apples such as McIntosh or Pink Lady. You can use green eating apples for this recipe but you may need to add a touch more sugar if they are very sour.

Are baked oats healthy?

Yes, absolutely. They contain all the ingredients of porridge plus and egg and some baking powder. Oats are a great source of fibre and apples are full of micronutrients.

Can you freeze baked oats?

Yes absolutely. You can scale up the recipe by making double or triple the recipe. Line a baking dish or tray with baking paper so when they are cooked you can easily remove them. Once cooled, slice into portions, wrap tightly with clingfilm and freeze for up to 6 months.

Equipment

  • 1 small blender or hand blender and bowl
  • 1 Small mixing bowl

Ingredients
  

  • 80 grams oats
  • 150 grams milk
  • 1 whole egg
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla essence
  • 1 large apple, peeled, cored and chopped into chunks
  • 1/4 tsp cinnamon
  • 30 grams brown sugar
  • greek yoghurt to serve -optional

Instructions
 

  • Preheat oven to 170°c (340°f) or 160°c (320°f) if fan assisted.
  • In a small blender or bowl, add the oats, milk, baking powder, egg and vanilla. Blend together until smooth.
  • In the small mixing bowl, add the apples, cinnamon and brown sugar. Mix together until coated. Pour the oats mix over the apples and mix everything together.
  • Pour into the baking dishes about 3/4 full, leaving space for it to rise.
  • Bake for 20-30 minutes, checking to see if they are cooked after 20 minutes. They are done when they are dry to the touch and a toothpick inserted into the middle comes out clean.
  • The baked oats can be served warm or cold, with a dollop of greek yoghurt.
  • Leftovers can be wrapped tightly and kept at room temeprature for up to 2 days.
