Chocolate Guinness Loaf Cake with Irish Whiskey Buttercream Recipe

This Chocolate Guinness Loaf Cake with Irish Whiskey Buttercream is to die for. It’s rich, chocolately with deep malty hoppy flavours thanks to the addition of Guinness. The Guinness also helps create a moist crumb that keeps fresh for days. I used Guinness for this loaf cake but you can use any other high quality stout. Some popular Irish stouts include: O’Haras Irish Stout, Murphys, Black Rock Irish Stout. The loaf cake is topped with fluffy, sweet Irish Whiskey buttercream. I used Drombeg by West Cork Distillery but you can use any high quality whiskey you choose such as; Bushmills, Jameson, Glendalough.

This recipe is crazy easy, it consists of;

Irish Whiskey Buttercream Icing

CHOCOLATE GUINNESS LOAF CAKE

This recipe starts off with making the Chocolate Guinness Cake batter. Begin by melting the butter in a small saucepan or microwave. Remove from the heat, place into a mixing bowl and add in the cocoa powder. Whisk well. Next, add in the Guinness and whisk again. For the next step, add the flour, baking powder and sugar. Add the yoghurt and egg to the cocoa mix. Whisk well until a smooth batter forms. Pour this into a lined and greased loaf tin.

Bake for 30-40 minutes until the cake has fully risen and a skewer inserted into the middle comes out clean. Allow to cool completely before icing.

Irish Whiskey Buttercream

This icing is just a simple Buttercream recipe with added Irish Whiskey as the liquid. Start off by beating the butter and icing sugar well for 5 minutes until smooth and pale. Next, add the Irish Whiskey and beat for a further 3-4 minutes until fluffy. Spread over the top of the cooled Chocolate Guinness Cake and serve.

Can children eat this Chocolate Guinness Cake?

While there is Guinness added to the cake batter, it is baked off so the alcohol within the cake is evaporated. However, the Irish Whiskey buttercream is laced with plenty of Whiskey and therefore not suitable for children. If you have kids in the house, consider making the buttercream and keeping it separate for the adults to add to their plate.

How do you store a chocolate Guinness cake?

Keep any leftovers in an airtight container or tightly wrapped with cling film at room temperature. Chocolate Guinness cake will last about 4-5 days if properly stored. To freeze, wrap tightly in cling film by the slice and freeze for up to 3 months.

What can I use instead of stout?

There is a bunch of liquids you can use instead of Guinness for this cake recipe. They won’t provide a deep, malty hoppy flavour but it will still create a moist, delicious chocolate cake . Instead of Guinness you could use;

  • Milk
  • Chocolate Milk
  • Almond Milk
  • Hazelnut Milk
  • Oat Milk
  • Cold Coffee
  • Cold Tea
  • Red Wine

  • 1 Whisk
  • 1 Rubber spatula
  • 1 Loaf tin
  • 1 Electric whisk or stand mixer with paddle attachment
  • 1 Small offset palette knife

Ingredients

Chocolate Guinness Loaf

  • 125 grams butter melted
  • 40 grams cocoa powder
  • 125 grams Guinness
  • 140 grams plain flour
  • 1 tsp baking soda
  • 150 grams caster sugar
  • 1 whole egg
  • 70 grams yoghurt or sour cream

Irish Whiskey Buttercream

  • 100 grams soft, room temp butter
  • 200 grams icing sugar
  • 50 grams Irish Whiskey

Instructions

Chocolate Guinness Loaf

  • Preheat oven to 180°c (360°f) or 170°c (340°f) if fan assisted.
  • In a large mixing bowl, add the melted butter, cocoa powder and Guinness. Whisk together until no more lumps remain.
  • Next, add in the flour, baking soda and caster sugar. Whisk together until combined.
  • Add the yoghurt/sour cream and egg and whisk again until no lumps remain.
  • Pour into a greased and lined loaf tin and smooth out evenly with palette knife.
  • Bake for 35-40 minutes until a skewer inserted into the middle of the loaf comes out clean. Allow to cool fully before decorating.

Irish Whiskey Buttercream

  • In a large mixing bowl or stand mixer bowl, add the room temperature, soft butter and icing sugar.
  • Beat well for 5 minutes on high until pale and fluffy.
  • Scrape down the sides well and add the whiskey.
  • Continue beating for another 5 minutes.
  • Remove the cooled cake from the tin and slather the buttercream all over the top of the loaf.
