Chocolate Guinness Cake with Baileys Buttercream Icing Recipe

St. Patrick’s Day is close by so why not celebrate with this fudgy, rich and moist Chocolate Guinness Cake recipe with Baileys Buttercream Icing. I got this recipe from Nigella that I have slightly altered.

Chocolate Guinness Cake

This recipe starts off with making the Chocolate Guinness Cake batter. Begin by melting the butter in a small saucepan. Remove from the heat and add in the cocoa powder. Whisk well. Next, add in the Guinness and whisk again. In a large mixing bowl, add the flour, baking powder and sugar. Add the cocoa mix along with the eggs and yoghurt. Whisk well until a smooth batter forms. Pour this into a lined and greased 10 inch (25cm) round cake tin, like this one.

Bake for 40-60 minutes until the cake has fully risen and a skewer inserted into the middle comes out clean. Allow to cool completely before icing.

Bailey’s Buttercream Icing

This icing is just a simple Buttercream recipe with added Bailey’s as the liquid. Start off by beating the butter well for 2-3 minutes until smooth and pale. Next, add the icing sugar and Bailey’s and beat for a further 3-4 minutes until fluffy. Spread over the top of the cooled Chocolate Guinness Cake and serve.

  • 10 inch round cake tin. (25cm)

Ingredients

Chocolate Guinness Cake

  • 250 grams butter
  • 75 grams cocoa powder
  • 250 ml Guinness
  • 275 grams plain flour
  • 2 tsp baking soda
  • 300 grams caster sugar
  • 140 grams plain yoghurt greek or natural
  • 2 whole eggs

Baileys Buttercream Icing

  • 125 grams butter room temperature
  • 250 grams icing sugar
  • 20 ml baileys

Instructions

Chocolate Guinness Cake

  • Preheat oven to 170°c (340°f) or 160°c. (320°f).
  • In a small saucepan, add the butter. Melt this on a medium heat until totally melted.
  • Take off the heat and whisk in the cocoa powder. Next, whisk in the Guinness.
  • In a large mixing bowl, add the flour, baking soda, sugar, eggs and yoghurt.
  • Add the chocolate mixture and whisk until smooth.
  • Pour into a greased and lined 10 inch (25cm) round cake tin. Bake for 40-60 minutes or until fully cooked and a skewer inserted into the middle comes out clean.
  • Allow to cool totally before icing.

Baileys Buttercream Icing

  • In a large mixing bowl, beat the butter with an electric whisk or stand mixer with the beater attachment for 3-4 minutes until pale.
  • Add the icing sugar and baileys and beat again for a further 3-4 minutes until fluffy and creamy.
