St. Patrick’s Day is close by so why not celebrate with this fudgy, rich and moist Chocolate Guinness Cake recipe with Baileys Buttercream Icing. I got this recipe from Nigella that I have slightly altered.
This recipe is crazy easy, it consists of;
–Chocolate Guinness Cake Recipe
–Baileys Buttercream Icing
This recipe starts off with making the Chocolate Guinness Cake batter. Begin by melting the butter in a small saucepan. Remove from the heat and add in the cocoa powder. Whisk well. Next, add in the Guinness and whisk again. In a large mixing bowl, add the flour, baking powder and sugar. Add the cocoa mix along with the eggs and yoghurt. Whisk well until a smooth batter forms. Pour this into a lined and greased 10 inch (25cm) round cake tin, like this one.
Bake for 40-60 minutes until the cake has fully risen and a skewer inserted into the middle comes out clean. Allow to cool completely before icing.
This icing is just a simple Buttercream recipe with added Bailey’s as the liquid. Start off by beating the butter well for 2-3 minutes until smooth and pale. Next, add the icing sugar and Bailey’s and beat for a further 3-4 minutes until fluffy. Spread over the top of the cooled Chocolate Guinness Cake and serve.
